Farmers Market Start Up Part 1
This introductory course will teach participants how to prepare and open a farmers
market. Students will learn how to plant, plan, calculate, design and promote their
produce. Part II will be offered in the summer semester and will teach students to
how to prepare and sell their produce.
Food Safety and Sanitation
This is course will focus on causes and prevention of food borne illnesses and accidents.
Course stresses food service workers responsibilities in safety and protecting public
health. Course meets requirements for Illinois Department of Public Health Certification..
Hot and Cold Appetizers
Participants will learn how to create the perfect hot, cold and easy party pleasers
for their guest. These small bites will go perfectly with casual get-togethers or
sophisticated dinner parties.
Pizza Making, That’s Amore
Making pizza from scratch is as easy as pie. Students will learn how to prepare a
pizza pie starting from making the dough to rolling it out, and then, of course, adding
all the toppings. Discover how fresh ingredients add a real bang! You have never had
pizza as good as your own homemade version.
Holiday Cooking
Whether or not the weather outside is frightful, the food is so delightful! Join us
as we create a holiday meal that would make any host or hostess proud. Participants
will learn how to create seasonal favorites, including roasted chicken, potatoes,
and a veggie casserole. Our trained Chefs will highlight techniques, such as proper
seasoning.

Gluten Free Cooking and Baking
There's no reason why freshly baked bread and baked goods can't be a part of your
life. Learn everything you need to know about the wide world of gluten-free grains,
as we teach you how to make a wide array of delicious and satisfying baked goods.
Sausage Making
This four-hour class will teach you how to make sausage. Students will learn the basics
from seasoning to ratios for creating your own recipe, to stuffing and casing your
sausages. This course is led by a skilled and experience Chef.
Knife Skills
Basic knife skills, including how to hold a knife properly, knife safety, knife sharpening;
basic knife cuts, such as brunoise small dice, medium dice, large dice, fine julienne,
julienne, battonet, paysanne, and tornee; and proper fruit and vegetable preparation.
This course is a cross-listed course with college credit to be taken as non-credit.
Mixology
A systematic study of the application of bartending techniques and principals, where
students will practice the preparation of classical and fusion-style cocktails in
a hands-on laboratory and recognize equipment and technology used in a professional
bar atmosphere, including customer service. Students must be at least twenty-one years
old by the day before class starts. Proof of age with a government issued I.D. will
be required on the day of class. This course is a cross-listed course with college
credit to be taken as non-credit.
Chocolate
Fundamentals of working with chocolate, history, various types of chocolate, learn
to temper, molded and Free-form creations, candies and creation of showpieces. This
course is a cross-listed course with college credit to be taken as non-credit.

Fitness Classes offer a great workout alternative for individuals of all ages. Whether your goal is to kick start your weight loss plan or improve your lifestyle, we have many opportunities for you at Triton. Our fitness classes take place in our new campus fitness center.
Fitness Courses
Designed for all ages. An easygoing class with a slow pace using various props. The use of light or heavy weights is optional. Includes core and balance exercises.
Feel the crunch. Feel the six pack. Having a strong core is the cornerstone for performing many exercises properly and safely. You will be challenged to take on a mixture of abs exercises to work the core muscles. The perfect complement to any workout plan.
Full-body workout that focuses on postural strength and alignment followed by a series of upper body exercises. The ballet barre will be used to sculpt the lower body for flexibility training and definition of muscles. Emphasis is on invigorating stretches to achieve toning in the muscles.
Tai chi is an ancient Chinese art that combines meditation, therapeutic breathing and slow, flowing movement into a unique form of exercise that tones and strengthens without stress or strain. Tai chi is beautiful to watch and enjoyably stimulating to perform.
Yoga is a system of physical exercise and mental relaxation as well as an attitude toward life. You will gain peace of mind and the ability to relax as you improve muscle tone and body flexibility. Learn how to cope with stress and tension via this coed class. Bring yoga mat to class.
Dance your way to a fitter you! With exciting and unique Latin moves and rhythms, Zumba is taking the world by storm! Zumba is a fitness/ Latin dance program designed to strengthen the heart and lungs, trim and tone the entire body, increase flexibility, improve coordination and develop body awareness. Zumba combines high energy and motivating Latin music with unique dance moves that allow participants to dance away their worries.
Total body workout that incorporates drills designed to enhance agility, speed, power, strength, and quickness. You'll move around the room to a number of different stations - each designed for a specific exercise. If you like variety, this workout is for you! Modifications can be made for each exercise if needed.
This course is designed for individuals interested in becoming fitness professionals who lead and instruct exercise in group settings using a variety of teaching and motivational techniques to create a positive exercise experience. This 45- hour course is designed to provide knowledge and understanding of the American College of Sports Medicine (ACSM) Certified Group Exercise Instructor ® examination topics and outcomes.
A total body workout focusing on conditioning the body using jump ropes. J.U.M.P (Jump rope-Upper body-Muscular strength-Power) will teach students how to circulate through a variety of multifunctional exercises. Participants do not need to be a master rope skipper to take this course.
A total body cardio workout focusing on strength conditioning using kettlebells and plyometrics.
Are you looking for a one-on-one Personal Training with a Certified Personal Trainer? This course offers a systematic counseling approach that is maintainable, easy to follow and specifically designed for you. Each session will involve instruction on form, technique, coordination, and balance by providing positive feedback and creating an environment that is friendly, stimulating and personally tailored. Assessments may include body composition, total body measurements as well as strength and cardiovascular benchmarks.
The Pilates Method incorporates Eastern and Western philosophies of physical and mental conditioning which focus on re-patterning, realigning, clarifying, and defining the body. Pilates mat work is a structured regimen of continuously flowing, rhythmic movements designed to strengthen, lengthen and tone your body without machines. Pilates has long been revered as the best all around workout technique; optimize flexibility, balance, coordination, range of motion, and muscular endurance.
The Reformer is a sophisticated system of springs, straps, pulleys and a rolling platform. This equipment, like all of the Pilates equipment, works in two ways: it can act as additional muscles to aid the body on its path to health while you work towards efficient movement patterns, and it can also provide resistance to build strong muscles and bones. No experience is necessary for beginners; equipment adjustment and changes are explained and demonstrated throughout the class.
A total body cardio workout that uses light weighted "drumsticks" called ripstix. Each class fuses Pilates, isometric movements and aerobics with constant stimulated drumming to sculpt muscle and burn calories. The routines are simple and easy to follow.
A total lower-body workout that focuses on those hard to sculpt areas to trim thighs and shape your legs, working on your gluteal muscles. The perfect addition to any workout routine.

If you're male or female, in or out of shape, by participation in our total fitness
program, you'll get an exercise prescription that's just perfect for you. A personalized
computer assessment will establish a blend of workouts on universal exercise machines,
aerobic bicycles, and the indoor track to maximize the results of your exercise time.
Join the fun, and enjoy the results! You must attend class the first week to take
part in the orientation program.
Theory and practice of exercise in the form of walking is performed to improve health and fitness. Skills and knowledge will be taught to carry over the application of walking throughout the student's lifetime.
A less-intense course for the active older adult, beginners, and/or people who are not used to exercising. Zumba Gold uses the same great Latin styles of music and dance and is as much fun as the regular Zumba classes. Your balance, strength, flexibility and most importantly, your heart will improve.
